Directions:
1) In large pot, sauté 1 onion, and 1-2 lbs cubed chicken in 3 tbsp oil.
2) Pinch bag of soup directly below the orzo; pour out just the orzo and set aside.
3) Add 10 C water, the rest of package contents (not orzo), boil and simmer covered for 30 mins.
4) Add orzo, 3 tbsp lemon juice, 1 C large cubed zucchini, and 1 C spinach; cook for another 15 min. Season with salt and pepper. Serve and garnish with parmesan cheese.

Lemon Chicken Orzo Soup
Instant Pot Cooking Instructions:
1. Sauté:
* Set Instant Pot to Sauté mode.
* Add 3 tbsp oil, then sauté onion and chicken until chicken is mostly cooked on the outside (about 5–6 min).
2. Add Water (or broth) & Soup Mix:
* Turn off sauté mode.
* Add 10 cups water (or broth) and the rest of the soup mix (excluding orzo).
* Stir, then seal the lid, set valve to Sealing.
3. Pressure Cook:
* Set to Pressure Cook (Manual) on High for 10 minutes.
* After cooking, let pressure naturally release for 10 minutes, then quick release the rest.
4. Add Orzo, Zucchini & Lemon Juice:
* Open lid and stir in:
* Reserved orzo
* 1 cup zucchini (large dice)
* 3 tbsp lemon juice
5. Pressure Cook Again – Short Time:
* Reseal the lid and set Instant Pot to Pressure Cook (High) for just 1 minute.
* Once done, quick release the pressure immediately to avoid overcooking.
6. Add Spinach & Finish:
* Stir in 1 cup fresh spinach (no need to pressure cook it—residual heat will wilt it perfectly).
* Adjust seasoning with salt and pepper, garnish with Parmesan, and serve.
Notes:
Do not pressure cook spinach—it loses colour and texture quickly.
Cut zucchini into larger pieces so it holds up during pressure cooking.
A 1-minute pressure cook is safe for orzo, but if you prefer a slightly firmer texture, you can:
* Reduce the added water by ½ cup in Step 5
* OR shorten the pressure cook time slightly
* OR skip pressure cooking in Step 5 altogether: set the Instant Pot to sauté and simmer for 7–10 minutes instead, stirring occasionally and checking the pasta for doneness.
