Directions:

1) In large pot, sauté 1 diced onion in 3 tbsp oil.

2) Pinch bag of soup directly below the pasta; pour out just the pasta and set aside.

3) Add to pot: 7 C water, remaining package contents (not including pasta), boil, then simmer covered for 40 min.

4) Add 796 ml crushed tomatoes and pasta, stir and simmer until cooked (approx 20 min).

Season with salt and pepper. Garnish with croutons and parmesan cheese. Option: blend or purée before adding pasta.

Prairie Tomato Lentil Soup

Instant Pot Cooking Instructions:
1. Sauté Aromatics:
* Set Instant Pot to Sauté mode.
* Add 3 tbsp oil and sauté 1 diced onion until softened (about 4–5 min).

2. Add Water (or broth) & Soup Mix (no pasta):
* Turn off sauté.
* Add 7 cups water (or broth) and the remaining soup mix (excluding pasta).
* Stir to combine.
* Seal the lid, set valve to Sealing.

3. Pressure Cook Base:
* Set to SOUP Pressure Cook (or Manual - High) for 18 minutes.
* Let pressure naturally release for 10 minutes, then do a quick release.

 Optional: If you want a smooth texture, add in the crushed tomatoes and purée using an immersion blender before adding pasta.

4. Add Crushed Tomatoes & Pasta:
* Stir in the 796 ml crushed tomatoes and reserved pasta.
* Set to Sauté mode and simmer for 15 - 18 minutes, stirring occasionally (so the pasta doesn’t stick to the bottom) until pasta is cooked through.

 Pressure cooking pasta and tomato together isn't ideal—it may cause a “burn” warning. Simmering is safer and still efficient.

5. Finish & Serve:
* Season with salt and pepper to taste.
* Serve hot, topped with croutons and parmesan cheese, if desired.
